This yummy recipe will totally satisfy those chocolate cravings, and is a lot healthier than your traditional yule log.

Time: 30 minutes + 1 hr. chilling time

Servings: 12-15 portions

What Yule (hehehe)?Need:

  • 1 cup Medjool dates
  • 4 cups Rice Krispies Cereal
  • 3 tbsp melted coconut oil
  • 2/3 cups melted 70% dark chocolate

Icing:

  • 6 ripe avocados
  • 1.5 cups cacao powder
  • 2 cups maple syrup
  • 2/3 cups melted 70% dark chocolate

Decorations (Optional):

  • white and milk chocolate shavings (optional)
  • 1/4 cup crushed pistachios
  • cocoa powder

Directions

Line 13×18 cookie sheet with parchment paper.

Place Rice Krispies in a large bowl. Set aside.

Blend dates, chocolate and coconut oil in a food processor until it becomes a smooth paste consistency.

Pour over Rice Krispies. Mix well.

Spread the mixture over the cookie sheet. Press down so it is flat and even.

Blend all Icing ingredients in a food processor until smooth and even.

Spread half the Icing mixture over the Rice Krispies on the cookie sheet. Put the remaining half of the Icing in the fridge.

Using the parchment paper, roll the log into a tight cylinder. Then put in the fridge for 30 minutes.

Decorate with the remaining icing. Sprinkle with cocoa powder, pistachios and chocolate shavings.

Refrigerate for another 30 minutes before serving.
